Sweet Potato Shepherd’s Pie

Of course I can’t just make a normal shepherd’s pie.

That’s a layer of sweet potatoes on the bottom, a layer of ground turkey with Cajun seasoning, some collard greens, and another layer of sweet potatoes.

Who wouldn’t love it?  My husband, that’s who.  I almost had him convinced when he thought it was spinach.  That’s okay, though.  That just means more for me.   Good news since this recipe from Good Housekeeping comes in at 290 calories.

I took a few prep pictures, but you’ve all seen green and orange before.  Besides, today was the 50th Anniversary episode of General Hospital, so I must go rev up the DVR.

Eat Well and Savor.
