Applesauce

If I had left it up to Jennifer Reese I would have had apple soup.  In Make the Bread, Buy the Butter she says:  Place in a saucepan with enough water to just about cover.  When you’re talking four pounds of apples that’s a lot of water.  No where does it mention draining the water.  Even though I’m a stickler for the rules, fortunately I did a little research first and actually drained before mashing.  One recipe I came across said to use only one cup of water.  Another said to just cover the pan.  This is the second recipe from JR that has been a flop.  One more strike and I might have to leave her behind.

While I’m busy being critical I should also say that this isn’t the most impressive recipe for applesauce.  The Barefoot Contessa has one in her book that is so much better.
