The Whole Enchilada Chicken Soup

That’s right.  Time for more soup.  Even though the weather is warm, it has been raining incessantly in the evening.  Phoebe is running out of places to hide from the thunder.  As far as I’m concerned, all this gloom equals soup.

Especially when this recipe from Hungry Girl is so easy.   I know it’s hard to see inside, but there’s chicken and a corn in there.  What is making that lovely golden hue, you ask.  Well, pumpkin and green enchilada sauce of course.  Lisa Lillien in 300 Under 300 says that you can use the optional toppings of fat-free cheddar or low-fat baked tortilla chips.  Of course I had neither in the house.  I went for a slice of American.  I thought HG would approve since it was fat-free.

I really felt like it needed something on top.  A little dollop of sour cream sounds good too.  Here’s the best thing about it:  one cup is only 105 calories.  You realize that means that I’m going to have two servings at a time.
