Mamy Simone’s Tabouleh

With couscous!

Yep. that looks like tabouleh to me.  This is from Lunch in Paris by Elizabeth Bard.  I’m still counting it as French, but I guess Mamy Simone is from Morocco.

The secret ingredient, you ask.  It’s a toss-up between grapefruit juice and golden raisins.  And just so you know, that’s way more than one serving in there.   This made a lovely lunch on my deck, which, by the way, is where my mint came from.
