Plaintain Hush Puppies

Back in the day I used to love to go to Red Lobster for those hush puppies.  These are nothing like those.  In fact, I think these are more like fritters.

Here’s the thing about these little gems:  the ingredients include plantains and corn, period.  Well, actually, plantains and corn, comma, baking powder.   It’s a pretty simple recipe from Rachael Ray.

Hanging out next door is an avocado dipping sauce and an orange-garlic version.  My garlic was pretty strong, but the avocado was just right.

The avocado was pretty amazing on top of these burgers too.

This recipe is from the May 2008 edition of Fitness magazine.  That’s right, I said Fitness.  They are a Sara Moulton recipe called “Det” Burger.

As if the sautéed onions and mushrooms weren’t appealing enough, there’s some kalamata olive in there too.  On top of that, they are steamed in beer.

I guess the fact that this calls for reduced-fat cheese and lean beef makes it worthy of Fitness.  That, and the bun isn’t included in the 381 calories.
