Double Chocolate Pudding Pie

I made my own crust and everything.  I really didn’t feel like digging through the boxes for the pie pan, so I had to go old-school with the foil pan.

This was another holiday classic in our house.  Of course it came out of the Jell-O box.  My mother didn’t believe in the instant stuff, though.

This is from Ellie Krieger and The Food You Crave.  The crust couldn’t have been easier:  graham crackers in the food processor with a touch of butter and bake.  Done.

In fact, the pudding itself was pretty easy too.  Thickening is usually not my strong suit, but this went off without a hitch.  Maybe it’s my new gas stove.

The best thing about this pie?  It comes in at 255 calories a slice.

The worst part?  Waiting the three hours for it to set in the fridge.  Oh, yeah, and not eating a second piece.
