Portobello Lasagna Rollups

This is supposed to include Ellie Krieger’s Easy Tomato Sauce, but let’s just say that my easy sauce came from Paul Newman. 

This is how it all began.

Just some portobellos in the marinara and the usual ricotta/spinach inside the noodle.   In The Food You Crave EK says to use whole wheat noodles.  I was not impressed with the texture and  a little disappointed that some of the cute little curly edges of the noodles fell off.

That didn’t affect the taste, however.

Two thumbs up, as far as I’m concerned.

Eat Well and Savor.
