Vegetable “Meat” Loaf

There’s just no way to make this look pretty, but boy did it taste good.  When I got the March issue of Cooking Light I knew instantly that I would have to make this:  The topping has vodka in it.  It may only be a tablespoon, but it’s the thought that counts.  And I may have only had vanilla vodka in the house, but that didn’t matter one bit either.

Just in case you’re dying to know, this is what two pounds of mushrooms look like after they’ve been through the food processor.

It doesn’t get any prettier.  There’s a red and green pepper and some asparagus in there.  I thought they might stand out too much, but everything blended together perfectly.   The walnuts were the best part.

Seriously, though, I’ve made food for the dog that looks better than this.   Even though it turned out very good in the end, it was a lot of work and probably will not be repeated anytime soon.  But here’s the recipe just in case you’re feeling inclined.
