Here in Atlanta it feels like spring and this salad, to me, looks like spring. The flavors were great, but I didn’t really like the texture of the cucumber with the shrimp. Definitely a nice light appetizer, though. This is from Ellie Krieger and The Food You Crave.
One good thing about this recipe is that it went together in a flash, which is a good thing because I have been really busy lately. Don’t get too excited about all that shrimp, though, that’s actually three servings.
