Shepherd’s Pie

I did not grow up with shepherd’s pie.  My mom used to make a deconstructed version:  ground beef with onions, mashed potatoes, and creamed corn.  Of course that meant I had to sit at the table until I picked out all the onions.  It wasn’t until we moved to Maine that I realized there was such a thing as shepherd’s pie.  I often wondered why my mom didn’t put them together.  My dad would pile his up on his plate.  His theory:  mix it together, because it all winds up in the same place. 

Tonight I made Ellie Krieger’s version from Comfort Food Fix.  She never ceases to amaze me with her healthy versions/portions.  This one was six servings out of a 9×13 pan and still under 400 calories.  In addition to peas, carrots, and mushrooms, EK manages to hide some cauliflower in the mashed potatoes.  Have I mentioned how much I love vegetables?  Even that wasn’t enough, I had to add a little spinach on the side.
