Warm Spinach and Artichoke Dip

From Ellie Krieger’s The Food You Crave.   Spinach dip is definitely something worth craving.   It’s one of my top appetizer selections at the Cheesecake Factory. 

This one was creamy, warm, and cheesy, just as EK promised.  However, I took a few liberties.   EK said to puree everything except the onion.  Well, I like a chunky artichoke, so I pureed the onions instead and tossed the chokes in at the end. 

This was before the oven.

There’s real mayo and light sour cream in there too, along with some mozzarella, which next time I will leave on top so that I can have that gooey crust .  Still, no complaints here. 

Totally worth 100 calories  . . . of course that doesn’t include the chips.
