After yesterday’s adventure with the macarons I needed something simple for dinner. Ellie Krieger’s salmon from The Food You Crave did the trick. While the salmon is in the oven just saute the shallots, add the grapefruit juice, and simmer.
The beautiful golden color is brought to you by honey. There’s some ginger in there too for some good measure. Save the basil and the grapefruit sections for the end.
This was tangy and sweet and perfect on the bed of steamed spinach.
EK said to roast the salmon at 350 for 18 minutes. When it first came out I was a little concerned that it was cooked a little too long. Even though it wasn’t as pink in the center as I’m used to, it was still delightfully tender.
