I read somewhere that the four seasons in the south are Almost Summer, Summer, Still Summer, and Christmas. I feel that makes my light non-Christmasy dish acceptable.
Obviously, I’m on an Ellie Krieger kick that will probably last until my husband returns in March. Today it is Soft Asian Summer Rolls with Sweet and Savory Dipping Sauce from The Food You Crave. It was my first time using rice paper. In fact, I had to actually ask for help at Whole Foods, because I thought they should be refrigerated – wrong. So I realize that actually making your own dipping sauce, shredding carrots, and assembling these babies with shrimp, basil, mint, and lettuce may be what some people consider a lot of work, but to me it’s a lovely afternoon. Some would say I have too much time on my hands. I say it keeps me from shopping.
I forgot to mention the rice noodles. EK says a serving size is one roll, for a starter. I say that two rolls makes a light meal and then I have room for hummus and wine later.
