So good and so easy. Thanks again to Ellie Krieger and The Food You Crave. This is another one that would be a good repeat in the summer. You would think I had never seen a vegetable as fascinated as I am by their photogenic qualities. The vegetables in question: tomatoes, fennel, and zucchini.
Roasted with the chicken, along with garlic and olive oil, and later some rosemary. I was particularly pleased to use the rosemary, since I have a plant in my kitchen that I have manged to not kill for the last year. Five minutes in the oven and the garlic was wafting through the air.
I love a BIG serving of vegetables.
